Bernard Michaut’s winery is small but perfectly formed. Following a 1m euro investment 5 years ago the winery is now fulfilling their dreams of producing top-flight Chablis.
The lieu-dit of Vauligneau (meaning little valley) is one of the more recent Premier Crus of Chablis elevated to this status for consistently producing superior quality wines. Domaine de la Motte’s 5 hectares of vineyards lie on south-and west-facing hills, where the soils have more clay and kimmeridgian features.
20% of the wine is fermented in oak barrels(228l&600l), the rest in stainless steel. The oaked proportion remains in barrel for 8-12 months.
The result is a exactly what a Premier Cru Chablis should be with a typically flinty and grassy edge to still quite primary Chardonnay fruit on the nose. This is followed by crisp, linear flavours which have real edge and definition, filling out in mid-palate but with a long, steely finish. It will continue to develop for up to 10 years.
Toasty oak and ripe, juicy mangoes on the nose, the palate is ripe, yet with plenty of fresh chablis acidity. This will be long-lived; expect at least five years’ drinking.
