The Highland Extravaganza

The newest addition to our gift box ranges, our Wild Venison boxes are something we are really proud of. This one sits at the top.

The idea behind this box was to creat our idea of a perfect day's culinary indulgence. We have provided the makings of a truly spectacular breakfast, lunch and dinner.

Start off the day with a breakfast of Smoked Salmon (perhaps with scrambled eggs?) fresh Scottish breakfast Tea, hand roasted, small batch coffee, jam and whisky marmalade.

Onto lunch... How about 2 different charcuterie meats, olives, Brussels Paté, seeded sourdough flatbreads and a crisp, flinty, most gorgeous Pouilly Fumé.

Now the main event. A 500g Wild Venison fillet straight off the hills that surround the Ardtaraig estate in Argyll. (We promise that you won't be disappointed, it's as good as it sounds!) Coffee rub seasoning along with exceptional salt from the award winning Blackthorn team and Pepper from the Peppermongers. (Dauphinoise/Boulanger Potatoes, Celeriac Pureé and the rest we leave to you) However, keep an eye out for a dedicated Mrs Morts Kitchen episode showing just how we like to cook our Venison Fillet releasing soon! All paired with a stunning 2016 Lussac St Emilion - this is our dream meal.

Now to the cheese board with Stilton, Cheddar, Onion Marmalade, oatcakes and a bottle of our favourite vintage Colheita port from Krohn.

Finally some salted caramel truffles from Amelie Chocolat and a small Rocket Monkey Coffee.

Tasting Notes:

 Chateau Jamard Belcour Lussac Saint Emilion 2016 Bordeaux, France

90% merlot and 10% cabernet franc grown on 5.4 hectares of clay and limestone and silty clay soils.
Aromas of damson jam, summer berries and a hint of brown spice.
The palate shows juicy berry fruits with lively fresh tannins that bring structure and a lovely persistence to the flavours that develop into more prune and mocha notes as the wine evolves in glass.

Wiese and Krohn Colheita 2005 Douro, Portugal

Nutty aromas, with notes of toffee and apple. The beautifully smooth and mellow palate has ripe fruit - characters of fig and raisin - along with rich and ripe spicy and nutty flavours. Complex and well-balanced, with great length. Bottled 2021
Wiese & Krohn was founded in 1865 by two Norwegians - Theodor Wiese and Dankert Krohn - shipping initially to Scandinavia
and Germany. In the century and a half since its foundation, Krohn has built up an outstanding reputation. Long renowned for the quality of their sublime Colheitas (single vintage tawnies), they produce a remarkably complete range for a small house, and each wine excels in its category. Much of the secret lies in the high quality of their vineyards - the magical combination of terroir, locality, aspect, incline and low-yielding vines. Their Quinta do Retiro Novo estate in Sarzedinho, in the Rio Torto valley (where vinification takes place), is all A grade vineyard. Indeed Krohn only work with grapes from A-graded vineyards across all of their ports, and their top wines are trodden by foot. Since 2013 Krohn has been part of the Fladgate Partnership – alongside Taylor's, Fonseca and Croft.

Domaine Lebrun Pouilly Fume 2020 Pouilly Fume, France

Typical expression of Pouilly Fume, lots of citrus fruit underpinned by smoky undertones when drunk in youth. With age come
complexity, worth cellaring.
With an average age of 25 years, the Sauvignon Blanc vines are planted at a density of 7000-8300 per hectare. The grapes are
gently pressed before the juice is fermented in tank at low temperatures, usually 16-18 degrees. Maturation is carried out on fine lees in both stainless steel tanks and large oak vessels for a period of 5 months.
Laurent Lebrun was trained as a winemaker at Montpellier, spent his formative years training in Australia and then returned to
France to take up the position of General Manager and Head Winemaker at Château Olivier, Grand Cru Classé in Bordeaux. He has recently taken over the running of his family estate in Pouilly-Fumé which makes classic, flinty wines from 9 hectares of vines on the slopes of St. Andelain.
